What is KOMBUCHA?
Kombucha has been consumed for thousands of years and is a Fermented probiotic drink that originated from China but oftentimes is credited to be originated from Russia.
It is made from tea, sugar, a SCOBY and a starter tea from a previous batch (you will need a starter kit " SCOBY or Mushroom + Starter Tea" to start brewing Kombucha).
The sugar and caffeine is used all up in the fermentation process so don’t worry, it has very little (if any) caffeine or sugar in the final product.
A SCOBY is an acronym for symbiotic colony of bacteria and yeast. In short, it’s beneficial bacteria and yeasts that work synergistically together to produce a certain type of ferment.
Kombucha is brewed (or fermented) over a course of 7-21 days. The final product is naturally carbonated making this a fizzy and tasty drink.

WHY DO I NEED A SCOBY?
Without a SCOBY, you have no way to ferment Kombucha. People ferment their own Kombucha for many reasons. Saving a lot of money is a big motivator for some, while others seek experimentation with flavors not available commercially. More importantly, it is fun and easy to ferment it yourself.
The SCOBY is what initiates the fermentation process in sweet green or black tea (or any tea from the Camellia sinensis plant). The SCOBY is sometimes incorrectly referred to as a mushroom. It is a gelatinous-like disk that generally floats at the top of a jar of kombucha-in-the-making. The bacteria and yeast ferment (consume) the sugar and tea until it is slightly sour and bubbly.
